Experience the Soul of Moroccan Chicken
The true magic of this Moroccan Chicken lies in its extraordinary sauce. It’s more than just a coating; it’s a rich, complex symphony of flavors that evoke cherished memories. I vividly recall the year my family hosted a wonderful Moroccan family at the Naval War College when I was a teenager. Our friend, Mrs. Ameena, was an incredible cook, and her meals were a window into the heart of Moroccan culture. Food, after all, is often the most eloquent ambassador of any heritage, and Mrs. Ameena’s kitchen was a constant celebration of exotic tastes and warm hospitality.
Her authentic Moroccan dishes left an indelible impression, inspiring me to recreate those incredible flavors in my own kitchen. The goal was to craft a dish that captured the essence of her cooking – the harmonious blend of sweet, savory, and aromatic notes that define North African cuisine. This recipe is my loving tribute to those memories, designed to bring a taste of that cultural richness directly to your dining table.
The Aromatic Heart of This Moroccan Chicken Sauce
Creating an authentic Moroccan flavor profile begins with a masterful blend of spices. This dish features a carefully selected combination that is both warming and vibrant. Imagine the earthy depth of cumin, the golden hue and subtle warmth of turmeric (known for its incredible health benefits), the sweet fragrance of cinnamon, and the smoky richness of paprika. These spices are expertly balanced with fresh garlic and sweet onions, forming the foundation of a sauce that is truly captivating.
But the flavor journey doesn’t stop there. A touch of bright lemon zest and fresh lemon juice adds a crucial tangy counterpoint, cutting through the richness and lifting the entire dish. A hint of honey introduces a delicate sweetness, a hallmark of Moroccan tagines, which beautifully complements the savory spices and the natural sweetness of the raisins. This intricate balance of ingredients transforms simple chicken thighs into an exotic culinary delight that’s both comforting and adventurous.
Wholesome Ingredients for a Healthy & Flavorful Meal
When developing this recipe, I knew I wanted to incorporate wholesome ingredients that would contribute to both flavor and nutrition. That’s where Path Of Life’s Garbanzo Beans and Lentils came into play. Their blend of white and green garbanzo beans, combined with green and red lentils, infused with extra virgin olive oil, garlic, and basil, perfectly complements the savory Moroccan sauce. These nutrient-dense legumes add delightful texture and a robust earthiness, turning a simple chicken dish into a hearty, well-rounded meal.
For a perfect accompaniment, I opted for Path of Life’s Organic Brown Rice and Cooked Organic Red Quinoa blend. This side dish is lightly seasoned with salt and garlic, offering an excellent texture and a subtle flavor that harmonizes beautifully with the bold notes of the Moroccan Chicken. It’s an ideal choice for a complete and satisfying dinner.

Ingredients
-
6 chicken thighs, skin on -
salt and pepper -
3 tablespoons olive oil -
1 large sweet onion , chopped -
2 tablespoons fresh minced garlic -
1 tablespoon turmeric -
1 tablespoon cumin -
1 teaspoon cinnamon -
1 teaspoon paprika -
2 teaspoons lemon zest -
1 tablespoon lemon juice -
4 tablespoons honey -
1 tablespoon gluten-free flour, I prefer rice flour -
3 cups gluten-free chicken broth or bone broth, You can also use gluten-free bouillon -
1/2 cup raisins -
2 packages of Path of Life Garbanzos and Lentils -
1 package of Path of Life Organic Quinoa and Brown Rice
Instructions
-
In a large pan, heat olive oil on high heat.
-
Generously season both sides of the chicken thighs with salt and pepper.
-
Place chicken thighs in the hot pan and cook until they are golden brown and crispy on both sides. This usually takes about 5-7 minutes per side. Once cooked, remove the chicken and transfer to a clean plate, setting it aside.
-
In the same pan, add the chopped sweet onion and minced garlic. Sauté for about 5 minutes, or until the onions have softened and become translucent.
-
Stir in the turmeric, cumin, cinnamon, paprika, and lemon zest. Cook for another minute, stirring constantly, allowing the spices to become fragrant.
-
Pour in the gluten-free chicken broth (or bone broth), honey, and gluten-free flour. Whisk well until all ingredients are fully combined and the sauce begins to slightly thicken.
-
Return the crispy chicken thighs to the pan, nestling them into the sauce. Cover the pan and let it simmer for 15 minutes, allowing the flavors to meld beautifully.
-
Remove the lid and add the Path of Life Garbanzos and Lentils along with the raisins. Stir gently to incorporate them into the rich sauce.
-
Continue to cook uncovered for an additional 15-20 minutes, or until the chicken is cooked through and the sauce has reduced to your desired consistency.
-
While the chicken simmers, prepare the Path of Life Organic Quinoa and Brown Rice according to the package instructions.
-
Garnish your Moroccan Chicken with fresh cilantro or a wedge of lemon for an extra burst of flavor and color.
-
Serve hot and enjoy this incredibly aromatic and satisfying meal!
